Slow Cooked Kid Shanks in Port & Red Wine

Timings

  • Prep time about 10 minutes

  • Cooking time 6 hours

Ingredients

  • 2 x Kid Shanks

  • 1 x TBSP Plain Flour

  • 1 x Bay Leaf

  • 1 x Star Anise

  • 2 x Whole Cloves

  • 2 x Strips of Orange Peel

  • 150ML Port

  • 150ML Red Wine

  • 500ML Goat or Chicken Stock

  • 2 x Carrots

  • 1 x Onion

  • 2 x TBSP Olive Oil

  • Seasoning

Method

  1. Set slow cooker to Medium.

  2. Season flour, dredge shanks, heat olive oil to a high heat and brown shanks all over.

  3. Set shanks aside, de-glaze the pan with the red wine and port, leave to bubble for 2-3 minutes.

  4. Roughly chop carrots and slice onion, lay on base of the slow cooker together with the star anise, bay leaf, cloves and orange peel.

  5. Place the shanks on top, pour over the port & red wine and the chicken stock.

  6. Slow cook for approx 6 hours.

  7. Serve with mash.
