Kid Satay with Spicy Peanut Sauce

The recipe will serve 4 people.
Timings

Make marinade early, and allow 2 hours in fridge before cooking

Sauce & Cooking time approx. 10 minutes.
Ingredients

​Marinade
-
2 tbsp Fish Sauce
-
60ml Lime Juice
-
2 stalks Lemongrass
-
2 tbsp Agave Nectar
-
1 tbsp Soy Sauce
-
1 tbsp Minced Ginger
-
1/2 tsp Chilli Flakes
-
4 Garlic Cloves - minced
-
500g Diced Kid Meat
-
2 tbsp Vegetable Oil

Spicy Satay Sauce
-
3 tbsp Smooth Peanut Butter
-
60ml Coconut Milk
-
1 to 2 tsp Chilli-Garlic Sauce (to your taste)

2 tsp Fish Sauce
-
1 tbsp Lime Juice
-
1 tbsp Agave Nectar

Pack of Cooked Rice per person.
Method
Marinade
-
Whisk all EXCEPT the Vegetable Oil and Meat together.

Place Meat and Marinade in a freezer bag, and put in the fridge for 2 hours

Cooking & Sauce
-
Griddle fry the meat for a few minutes each side in Vegetable Oil.

While cooking, combine all the Sauce ingredients with 1TBSP of Water. Whisk until smooth
​
Serve meat on a bed of rice, and spoon sauce over.
