Kid Satay with Spicy Peanut Sauce

Serves

The recipe will serve 4 people.

Timings

  • Make marinade early, and allow 2 hours in fridge before cooking

  • Sauce & Cooking time approx. 10 minutes.

Ingredients

​Marinade

  • 2 tbsp Fish Sauce

  • 60ml Lime Juice

  • 2 stalks Lemongrass

  • 2 tbsp Agave Nectar

  • 1 tbsp Soy Sauce

  • 1 tbsp Minced Ginger

  • 1/2 tsp Chilli Flakes

  • 4 Garlic Cloves - minced

  • 500g Diced Kid Meat

  • 2 tbsp Vegetable Oil

Spicy Satay Sauce

  • 3 tbsp Smooth Peanut Butter

  • 60ml Coconut Milk

  • 1 to 2 tsp Chilli-Garlic Sauce (to your taste)

  • 2 tsp Fish Sauce

  • 1 tbsp Lime Juice

  • 1 tbsp Agave Nectar

Pack of Cooked Rice per person.

Method

Marinade

  1. Whisk all EXCEPT the Vegetable Oil  and Meat together.

  2. Place Meat and Marinade in a freezer bag, and put in the fridge for 2 hours

Cooking & Sauce

  1. Griddle fry the meat for a few minutes each side in Vegetable Oil.

  2. While cooking, combine all the Sauce ingredients with 1TBSP of Water.  Whisk until smooth

Serve meat on a bed of rice, and spoon sauce over.
